Pumpkin Raisin Bars
Ingredients:2 cups all purpose flour
2 cups granulated sugar
2 tsp baking powder
1 tsp baking soda
1 tsp each cinnamon & nutmeg
1/2 tsp salt
1/2 tsp cloves
3/4 cup canola oil
4 eggs
2 cups cooked pumpkin
1/2 cup chopped nuts
1/2 cup raisins, plumped
Directions:Heat oven to 350°F. Spray 10x15 inch jellyroll pan. In a large bowl combine bar ingredients except nuts and raisins. Beat at low speed until moistened then for 2 minutes on medium. Fold in nuts and raisins. Pour into pan. Bake 25 to 30 minutes or until toothpick or cake tester placed in center comes out clean. Cool and frost.
