Macaroon Oatmeal Cookies
Ingredients:1 cup all purpose flour
1/2 cup granulated sugar
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp salt
1 1/2 cups quick-cooking rolled oats
1/2 cup maraschino cherries, chopped
1/4 cup shredded coconut
1/2 cup canola oil
1 egg, beaten
1/4 cup 1% milk
1 tsp almond extract
Directions:Preheat oven to 400°F. In a bowl, sift together flour, sugar, baking powder, cinnamon and salt. Add rolled oats, cherries and coconut; mix thoroughly. Add canola oil, beaten egg, milk and almond extract. Stir until well blended. Drop by the teaspoon full on an unoiled cookie sheet. Bake 10 to 12 minutes
