Easy Raisin Cookies
Ingredients:3 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/2 tsp ground cinnamon
1 1/2 cups firmly packed brown sugar
3/4 cup canola oil
1/4 cup water
2 eggs
1 tsp vanilla
1 cup raisins, plumped
Directions:Preheat oven to 350°F. In a bowl, sift together flour, baking powder, baking soda, salt and cinnamon. Make a well and add brown sugar, canola oil, water, eggs and vanilla. Mix until smooth, fold in raisins. Drop by the teaspoon full onto a non-stick cookie sheet.
To plump raisins:
In a saucepan, cover raisins with water and bring to a boil. Remove from heat and let stand for 5 minutes. Drain. Bake 12 to 15 minutes.
