Granny's Fruit Cake
Ingredients:3 cups all purpose flour
1 cup granulated sugar
2 tsp salt
2 tsp ground cinnamon
1 tsp baking powder
1 tsp ground nutmeg
1 cup orange juice
1 cup canola oil
4 eggs
1/4 cup molasses
3 cups raisins
1 cup whole red and green cherries
1 cup mixed glazed fruit
1/2 cup lazed citron peel
3/4 cup whole almonds
3/4 cup walnuts or pecans
Directions:Preheat oven to 275°F. Line two 9x5 inch pans with aluminum foil; brush with canola oil. In a large bowl stir together flour, sugar, salt, cinnamon, baking powder and nutmeg. Add orange juice, canola oil, eggs and molasses. Beat 30 seconds with an electric mixer on low speed, scraping bowl occasionally. Beat 2 minutes on medium speed, scraping bowl occasionally. Stir in fruit and nuts. Spread in pans, Bake until wooden pick inserted in center comes out clean, approximately 2 1/2 to 3 hours. If browning too quickly, cover loosely with aluminum foil during last half hour of baking. Remove from pans, cool. Wrap in max paper then again in aluminum foil. Store in refrigerator 3 to 4 weeks or freeze.
