Turkey Breast Medallion with Sundried Cranberries
Ingredients:1 tbsp canola oil
2 turkey breast medallions
salt and pepper to taste
1/2 cup assorted sweet peppers, diced
2 tbsp sundried cranberries
tarragon to taste
2 tbsp white wine
2 tbsp cranberry juice
Directions:In a fry pan, with canola oil, saute the turkey on both sides and season with salt and pepper. Add the bell peppers and cook for a few minutes. Then add the cranberries, tarragon and white wine and flambe. Add the cranberry juice and reduce for a few minutes. Serve with your favorite vegetables and pasta.
