Sesame Steethead Trout with Honey Mustard Wasabi Sauce
Ingredients:4 Trout fillets 6 oz
1/4 cup white sesame seeds, toasted
1/4 cup black sesame seeds
1 tbsp canola oil
salt and pepper to taste
Sauce
1/2 cup real mayonnaise
1 tbsp honey
1 tbsp dijon mustard
1 tbsp prepared wasabi
juice of 1 lime
6 drops of sesame oil
Directions:To prepare dressing, combine mayonnaise, honey, Dijon mustard and wasabi in mixing bowl using a wire whisk. Add remaining dressing ingredients and mix again. Place dressing in a plastic squeeze bottle with a small tip.
To prepare the trout filet, season it with salt and pepper and brush with canola oil. Dredge all sides in sesame seeds.
Heat the pan over medium high heat with a small amount of canola oil. Add the filets one at a time. Lightly brown both sides for about 20 seconds on each side. Place on paper towel to absorb excess oil. Squeeze dressing on a dinner plate and gently place the fish in the sauce.
