Nan-King Cherry Bavarian with Canola Seed

Ingredients:
    1 package gelatin
    2/3 cup cold water

    vanilla Custard Sauce
    6 egg yolks
    1/2 cup granulated sugar
    2 cups milk
    1 1/2 tsp vanilla
    1/4 cup nan-king cherry preserve, warmed
    2 tbsp canola seed
    2 cups heavy whipping cream
Directions:

Soak gelatin in cold water. To prepare the custard sauce, whip egg yolks and sugar until thick and light. Scald milk ad slowly stir into egg yolk mixture, beating constantly. Cook over a double boiler stirring continually until it thickens slightly. While the vanilla custard is still hot, add softened gelatin, warm nan-king cherry preserve and canola see, stir until gelatin is dissolved. Cool in the refrigerator or over crushed ice.
While the custard is cooling, whip the cream until it forms soft peak. When custard sauce is very thick but not yet set, fold in the whipping cream, pour into serving dishes, then chill for 1-2 hours before service
