Cherokee Chile Con Carne
Ingredients:2 lb diced bison
1 large onion, medium diced
2 large green peppers, medium diced
4 tbsp canola oil
4 tbsp chopped garlic
14 oz can diced tomatoes
2-5 oz cans tomato paste
19 oz can kidney beans
19 oz can chick peas
2 cups water
4 tbsp chile powder
2 tbsp oregano
2 tbsp cracked black pepper
2 cubes OXO beef
2 cups frozen corn
Directions:Heat canola oil over medium to high heat in a heavy bottom pot. Add diced bison and thoroughly brown. Add peppers, onions and garlic. Saute until onions are clear. Add diced tomatoes, tomato paste, kidney beans and chickpeas. Heat over medium heat until it begins to simmer, stir often. Stir in remaining ingredients, reduce heat to low and simmer for 1 to 2 hours stirring regularly. Serve over rice or pasta and garnish with chopped green onions and cheddar cheese.
