Hot Potato Salad

Ingredients:
    1 medium onion, chopped
    3 tbsp canola oil
    4 cloves garlic, minced
    2 tbsp all purpose flour
    1 tbsp granulated sugar
    1 1/2 tsp celery salt
    1/4 tsp pepper
    3/4 cup water
    1/4 cup vinegar
    1 tbsp grain mustard
    1 small head cabbage, cut into eights, steamed
    chopped parsley for garnish
    4 medium potatoes, boiled whole
    1/2 lb smoked sausage ring, cooked
Directions:

In a large skillet, saute onion in canola oil until golden brown. Add garlic, cook until garlic begins to brown. Blend in flour, sugar, celery salt and pepper until moistened. Add water, vinegar and mustard. Bring to a boil, stirring constantly. Boil for 1 minute. Dice potatoes. Slice sausage into thin circles. Carefully toss potatoes and sausage into hot dressing. Arrange cabbage wedges around the edge of a heated serving platter. Arrange potato salad in the center of the serving platter. Sprinkle with chopped parsley to garnish. Serve with pumpernickel bread.
