Paint the Town Red SaladIngredients:1 head red leaf lettuce, rinsed, patted dry
1 head radicchio lettuce
OR
1 cup finely shredded red cabbage
1 cup raspberries in light syrup, drained
1/2 small red onion, cut into thin rings
Raspberry Vinaigrette
3 tbsp juice from raspberries
2 tbsp canola oil
2 tbsp raspberry vinegar
1 tsp granulated sugar
Dressing Yield: 7 tbsp) Directions:To prepare dressing: combine raspberry juice, canola oil, vinegar and sugar in a container with a tightly fitting lid. Shake until sugar dissolves.
In a large bowl, tear lettuce and radicchio into bite-sized pieces. Toss in raspberries and onion. Drizzle vinaigrette over salad and toss. Serve immediately. 6 servings Recipe compliments of the MN Canola Council
