Chocolate Marble Cake

Ingredients:
    2 1/4 sifted cake flour
    1 1/2 cups granulated sugar
    3 tsp baking powder
    1 tsp salt
    1/2 cup canola oil
    7 egg yolks
    3/4 cup cold water
    1 tsp vanilla
    7 egg whites
    1/2 tsp cream of tarter
    1/4 cup boiling water
    2 tbsp granulated sugar
    2 sq (2 oz) unsweetened square chocolate, melted

    Chocolate Whipped Cream
    1/4 cup sugar
    1/4 cup unsweetened cocoa powder
    2 cups whipping cream
    pinch salt

    Chill an hour or more. Then whip until stiff and spread on top and sides of cake. Sprinkle with 1/3 cup toasted almonds.

Directions:

In large bowl, sift together flour, 1 1/2 cups sugar, baking powder, and salt. Make a well in center of dry ingredients. Add canola oil, egg yolks, cold water, and vanilla; beat until smooth. In large bowl, beat egg whites and cream of tartar till very stiff peaks form. Pour egg yolk mixcture in stream over entire surface of egg whites, gently folding to blend. Remove 1/3 of batter to another bowl. Blend together boiling water, remaining sugar, and melted chocolate; fold into smaller portion of batter. Spoon half the light colored batter in unoiled 10" tube pan. Top with half the chocolate batter; repeat layers. With narrow spatula, swirl gently through batters to marble. Bake in 325°F for 55 minutes. Invert immediately and let hang until cold. Loosen with spatula and invert on a cake plate.

Top with chocolate whipped cream. Chill at least one hour.
