Fresh Tomato and Pepper Pasta
Ingredients:9 tomatoes (about 3 lb)
1/4 cup canola oil
3 large cloves garlic crushed
2 tbsp finely chopped jalapeno peppers
1 small green pepper
4 green onion thinly sliced
1/2 cup chopped basil
1/4 cup chopped oregano
1/4 cup fresh parsley
1/2 tsp each pepper and salt
3/4 cup grated fresh asiago or Parmesan cheese
1 lb penne pasta
Directions:Slice unpeeled tomatoes; squeeze out all juice and seeds. Chop tomotos and place in large bowl. Stir in canola oil, garlic and jalapeno pepper. Add green pepper, onions, basil, oregano, parsley, salt and pepper. Cook pasta, drain and turn into tomato mixture. Add cheese and toss until evenly distributed. Serve immediately.
