Gathered Green Salad with honey's Canola Vinaigrette and WIld Blackberries
Ingredients:1/4 cup apple cider vinegar
2 tsp liquid honey
2 garlic cloves, finely minced
1 tsp dry mustard
1/2 tsp salt
1/2 tsp coarsely ground black pepper
1 Tbsp minced fresh tarragon
OR
2 tsp dried tarragon
1 cup canola oil
salad greens for 6-8 servings
1 cup blackberries
Directions:In a jar shake together, vinegar, honey, garlic, mustard, salt, pepper, tarragon and canola oil. Sometimes when I'm in a hurry I combine it in a food processor. Refrigerate vinaigrette until needed or for up to 2 weeks.
To serve toss greens with enough dressing to coat evenly. Pile onto salad plates or in a salad bowl and scatter with blackberries.
