Nana's Bread

Ingredients:
    1/2 cup canola oil
    1/4 cup honey
    1/4 cup brown sugar
    1/4 molasses
    2 tsp salt
    2 cups boiling water
    1 1/2 - 2 cups tepid water
    6 cups whole wheat flour
    4 cups multigrain flour
    1 tsp sugar
    1/2 warm water
    1 Tbsp active yeast
    1/2 cup wheat bran
    1/4 cup sesame seeds
    3/4 cup sunflower seeds
    1/2 cup cornmeal
Directions:

In a bowl combine canola oil, honey, brown sugar, molasses, salt and boiling water. Mix until honey and molasses have melted. Then add tepid water, 2 cups whole wheat flour and 2 cups multigrain flour. Stir until it forms a thick soup like texture. In a separate bowl add sugar, warm water and active yeast; let stand for 10 minutes. Add yeast mixture to flour ingredients and stir well. In another bowl mix together 2 cups whole wheat flour, 2 cups multigrain flour, wheat bran, sesame seeds, sunflower seeds and cornmeal.
Add multigrain mix to flour ingredients and mix together until it forms a sticky ball and then add 2 cups more of whole wheat flour. Knead for approximately 10 minutes or until a smooth, soft dough form. Let rest 5 minutes. Brush the top of the dough with oil and place in an oiled bowl. Let dough rise until doubled in size about 2 hours. Punch down and let rise until doubled in size, about 1 hour. Punch down and form 5 loaves. Bake at 375°F for 35-45 minutes.
