Greek Lentil SaladIngredients:2 cups lentils or black beans, cooked
1 cup chopped cucumber
1/2 cup chopped red onion
2 tomatoes, chopped
1 yellow pepper, chopped
1 cup chopped cauliflower
1/2 cup chopped parsley
1/4 cup feta cheese, crumbled
1/2 cup sliced black olives
Dressing (whisk together):
2 tbsp lemon juice
1/2 tsp each salt, sugar
1 tbsp red wine vinegar
2 cloves garlic, minced
2 tsp dry crumbled oregano
2 tsp dry crumbled parsley or mint
2 tsp dry crumbled basil
1 tsp Greek seasoning
1/3 cup canola oil
