Tropical Carrot Cake

Ingredients:
    4 eggs
    2 cups granulated sugar
    1 1/4 cup canola oil
    2 cups all purpose flour
    2 tsp baking powder
    2 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp allspice
    1/4 tsp ginger
    2 cups grated carrots, packed
    3/4 cup crushed pineapple, lightly drained
    1 cup pecans, chopped
    1/2 cup coconut
Directions:

In large bowl, beat eggs; add sugar and canola oil. In separate bowl, mix flour, baking powder, baking soda, and spices; add to first mixture. Fold in carrots, pecans, pineapple, and coconut. Pour into 9x13" lightly oiled pan; bake at 350°F 45-60 minutes.
